DAY TWO! I'M ALIVE!

as I tell more people that I've gone vegan/gluten-free, the better it gets lol I now have the world to prove wrong, I will do this and do it right I will. I woke up late (as usual) so I didn't get to make my gluten-free toast with jelly. HOWEVER (!), I brought a grapefruit and made myself a smoothie that I had during class. The smoothie was Brittany's specialty with a twist (spinach, almond milk, 3 cubes of ice, banana slices and frozen mango & strawberries), it was delicious. The evil grapefruit though.... gave me severe heart burn ... immediately. lol my table mate kept telling me I should never have grapefruit again. So that Lutheran fruit has been scratched off my next grocery list.

anyway... didn't really need a snack since I had breakfast during class time. Lunch came around and I had my infamous Lemon Quinoa Cilantro Chickpea (from now on known as LQCC) salad that was really quite good, ( insert Jay Z voice ) if I do say so myself. I also had my carrots with garlic hummus from Trader Joe's.

Mom picked up my glasses so when I got them from her we went to eat and I initially thought of Shake Shack (across from my school) when she said she wanted a burger. So we went there only to find that there are ZERO gluten free / vegan meals there. So back into the car we went with mom mumbling "i just want a burger... vegan y que vegan". So I googled vegan/gluten free burgers in miami and sure enough BOOM five guys showed up. We drove down the street and when we went to order at Five Guys... there were no longer any gluten-free buns -__- so i ate french fries while mom had her mushroom filled double stacked hamburger with extra bacon.

Since then I've had a green apple and some more hummus. Not really hungry... when I know that the food that I have is more veggies or chips with hummus lol

  1. Orange juice has always given me issues which is why I stopped drinking orange juice a long time ago. You should avoid or minimize how much citrus you consume since its VERY acidic. Tomatoes are technically citrus but they are not as acidic as oranges or grapefruits.

    LOL @ your story of mom wanting a burger.

    So how long do you plan on being on this diet? Also, you may want to consider making a post of why you started this diet (what symptoms or issues you are having) that way as you progress you can talk to those symptoms/issues and say if they've improved or not. Oh and I didn't do this because I needed to start right away but you should also consider getting a physical done where they check your cholesterol, BMI, blood, etc so you have a baseline to compare against a month from now (if you follow this diet that long ;) Just some suggestions.

      Citrus is definitely out of my diet at this point. I add mandarins to my salads and that doesn't give me hurtburn so that's about the extent of the citrus in my diet.
      what's wrong with french fries! noooooooooooo :(
      I've only done it for like four days so maybe a month? see how I feel then?
      And i just got blood work done at my PCP so I have those results to compare if I get another blood work done in the future
