DAY TWO! I'M ALIVE!

as I tell more people that I've gone vegan/gluten-free, the better it gets lol I now have the world to prove wrong, I will do this and do it right I will. I woke up late (as usual) so I didn't get to make my gluten-free toast with jelly. HOWEVER (!), I brought a grapefruit and made myself a smoothie that I had during class. The smoothie was Brittany's specialty with a twist (spinach, almond milk, 3 cubes of ice, banana slices and frozen mango & strawberries), it was delicious. The evil grapefruit though.... gave me severe heart burn ... immediately. lol my table mate kept telling me I should never have grapefruit again. So that Lutheran fruit has been scratched off my next grocery list.

anyway... didn't really need a snack since I had breakfast during class time. Lunch came around and I had my infamous Lemon Quinoa Cilantro Chickpea (from now on known as LQCC) salad that was really quite good, ( insert Jay Z voice ) if I do say so myself. I also had my carrots with garlic hummus from Trader Joe's.

Mom picked up my glasses so when I got them from her we went to eat and I initially thought of Shake Shack (across from my school) when she said she wanted a burger. So we went there only to find that there are ZERO gluten free / vegan meals there. So back into the car we went with mom mumbling "i just want a burger... vegan y que vegan". So I googled vegan/gluten free burgers in miami and sure enough BOOM five guys showed up. We drove down the street and when we went to order at Five Guys... there were no longer any gluten-free buns -__- so i ate french fries while mom had her mushroom filled double stacked hamburger with extra bacon.

Since then I've had a green apple and some more hummus. Not really hungry... when I know that the food that I have is more veggies or chips with hummus lol

First Lunch

All I want are honey BBQ fritos twist. However, I had salsa and corn chips during this morning's presentations (thank you LStew for not making them flour chips) and now I'm having a spinach salad for lunch with the following:
  • cucumbers
  • carrots
  • chickpeas
  • bell peppers
  • almonds
  • onions
  • black beans
  • corn
  • craisins 
  • tomatoes
  • and i would've had avocado (my fav) but the lady forgot to put it or they didn't have any and she failed to mention it to me
  • oh and balsamic vinaigrette (as if that helps)
I almost had them add tortilla chips but after asking to see the bag... they weren't corn chips so i had to scratch that off my order (luckily, the owner said he would look into getting those for future customers... aka me.)
While the lady was making my salad, I picked up Food Should Taste Good Sweet Potato tortilla chips and a Dole Mixed Fruit cup because I feel like I'm still going to be starving after all this.
I'm going to see how I feel during spinning but I think I should be fine... I've gone to a class with less in my stomach than this.
Definitely hitting up Trader Joe's after spinning so I can stock up on fruit, veggies, and nuts.
Thus far my grocery list includes:

  • almond milk, chickpeas, hummus, carrots, celery, quinoa, cilantro, tomatoes, frozen pineapples, spinach, bananas (to make Brittany's morning smoothie), edamame, bag of mixed veggies, maple syrup (ha), corn tortilla chips, cocoa, tea bags, salsa (or pico de galla), lots and lots of lettuce for wraps, lime, lemons, avocados, gluten free oatmeal, gluten free pasta (fettuccine), nutritional yeast (?? i know... there's a recipe that requires this), guacamole, black beans, strawberries, raspberries, blueberries, arrowroot powder, raw buckwheat groats, coconut whipped cream, cucumber, asparagus, green apples, grapefruit, celery, coconut oil, mint leaves, frozen mango, hemp hearts, red onion, basil leaves, sun dried tomatoes, garlic, kale, and raw hazelnuts 
how hard can this be :)

Starting... TOMORROW!

First post and we're starting something new. Tomorrow I will be going to the supermarket and ATTEMPTING to purchase gluten-free/vegan groceries for the week. I'm not quite sure how that will go but I'm going to try and do some research beforehand on different recipes and meals I can make that seem appetizing and filling. This will be in an attempt to primarily better understand my brother's daily lifestyle and lead a healthier lifestyle myself. I will be making an appointment with a gastroenterologist soon to check my GI system and a possible link to Crohn's disease.
